RECIPE: Spinach and Sweet Potato bites

At first I was going to call them “bushels” to keep with the tree-theme but slowly realized that my appetizers don’t resemble bushes at all. This recipe was conceived when I was trying to get rid of things going bad in the fridge. That, and I bought a package of won ton wrappers on impulse. Won ton wrappers are a very versatile ingredient.

half package of won ton wrappers

1/4 cup of sweet potato, steamed and diced

1/4 baby spinach, finely chopped

1/2 apple, diced

handful of walnuts

3 fingerfuls of goat cheese

salt and pepper to taste

Steam sweet potato until mushy and gives under the pressure of a tight squeeze.

Mix potato, spinach, apple and walnut in a small container.

Take the won ton wrappers individually and take a small cup of water and wet finger. Run your damp finger along all edges.

Here’s the important part: DO NOT OVER FILL THE WON TONS! I did this (greedily) and the insides exploded and didn’t cook evenly.  Then (the fun part), carefully grab the wetted edges and pinch the won tons into desired shape.

Bake for 10 minutes or until golden brown. Let cool (also important, if you are greedy like me and ignore this, you will surely burn your mouth!) Enjoy!
